Simple Syrup
Makes 2 cups
1 cup water
1 cup superfine sugar
In 1 qt. saucepan, combine water and sugar. Bring to boil and reduce heat to
simmer, stirring with long wooden spoon or long-handled whisk until sugar is
completely dissolved. (Do not step away from the stove; you don't want it to
caramelize.) Remove pan from the hot burner, set aside to cool in pan. When
cool, store tightly capped in clean, sterilized bottle or jar. (The
dishwasher works fine in this case.) Makes two cups.
Tips and tricks: 1. Some people keep their Simple Syrup at the bar in
a plastic squeeze bottle with a cap. A well-washed, sterilized, empty vodka
or rum bottle with the label removed works great, too. Use a bottle spout
during the party, but replace it with the original cap for storage. Label
the bottle so your guests know what's in it. 2. Many Americans like their
cocktail sweeter these days. If a cocktail doesn't taste "right" sometimes
adding a dash of simple syrup does the trick. This works especially well
with drinks like daiquiris, hurricanes, margaritas, and rum drinks.
