Thanksgiving Cranberry Sauce
Unbeknownst to a lot of people,
cranberry sauce is one of the easiest holiday dishes to make. It's also
excellent to make a day or two in advance. You can also buy extra bags of
cranberries to wash, rinse, dry, and throw in the freezer to make sauce year
round.
For Thanksgiving: If you haven't made it ahead, make this early in
the day so it has plenty of time to chill and thicken. Follow the Cranberry
Sauce directions on the bag of fresh cranberries, letting them simmer until
the majority of the cranberries have popped. (This releases the pectin,
which thickens the cranberry sauce.) Chill 4-6 hours.
If the recipe isn't on your bag o' berries: In a large, non-aluminum
saucepan mix together and bring to a boil 1 1/2 cups water and 1 1/2 cups
sugar. Simmer 5-10 minutes uncovered to dissolve the sugar, then add 16 oz.
fresh cranberries which have been picked over, rinsed thoroughly, and
drained thoroughly, or frozen cranberries. Cover and simmer until
cranberries have popped open, about ten minutes. Remove from heat, cool, and
refrigerate 4-6 hours. Cranberry sauce stains--they were used to dye
fabric--so handle carefully. Makes about a quart.
