Mulled Cider
for 2
I love this drink
because it's filling, relatively healthy, not too heavy on the calories, and
makes the house smell great! For a group, this recipe is easily multiplied.
(Don't forget the cinnamon stick in the mug--it adds a really nice extra
kick of heat!)
In a 1-quart saucepan, combine:
2 cups apple cider
1 Tablespoon Mulling spices (I like Williams-Sonoma; if you prefer another
brand, see package directions for the amount)
1 Tablespoon golden brown sugar or honey (if using honey, use a little less)
Stir over medium-high heat until it comes to a boil. Reduce heat to a very
low simmer and simmer 15 minutes. (You may be tempted, as I was, to let it
go longer. Don't; it becomes very bitter.) Place a whole cinnamon stick in
each mug (I use heatproof Irish Whiskey mugs); strain cider into mugs, warn
your guests that it's hot, and serve.
Creative variation: Add a shot of Meyer's dark rum.
Tip: After serving the cider, I dump the used spices back into the
saucepan, add 2 cups of water, and gently simmer for 45 minutes. Then I pour
the liquid down the drain through a strainer and throw the used spices into
the trash. By doing this, you've had a great drink, freshened the air,
cleaned the drain, and deodorized the garbage pail, all in one shot! (P.S.
Santa asks that you never put the spices down the drain or garbage
disposal...)
